Symptoms typically appear within 6 to 72 hours of eating contaminated food: severe abdominal cramps, diarrhea that may be bloody, fever, and nausea lasting 4 to 7 days. Among confirmed cases tracked by the CDC's FoodNet surveillance network, roughly 30% of Salmonella patients require hospitalization. For young children and older adults, the infection can escalate quickly, leading to dangerous dehydration, high fevers, and in invasive cases, hospitalization lasting a week or longer.
